2 eggs, salt and freshly ground pepper

Gently whisk the eggs and season them with a pinch of salt and a dash of pepper. Warm a nonstick frying pan over medium heat. Place a minimal drizzle of oil onto the pan. Pour approximately 2 tablespoons of the beaten egg mixture onto the pan, swirling it to spread like you would with a crepe.
